Our white spelt cassarecce with The Tomato Stalls passata and topped with fresh basil.
We have had the pleasure of doing markets around London with the Tomato Stall group for 13 years, and the Carleschi family has enjoyed their produce ever since! They were founded in 2007 with the aim of reigniting Britain's love for this salad staple which had become boring and tasteless. Today their Head Growers Paul and Brian, with a combined 50 years worth of experience, grow up to 200 different varieties of tomatoes every year. They have an array of delicious flavours and shapes - from the smallest, sweetest cherry to the biggest boldest beef. We at Pastificio Carleschi admire how they're not afraid to try out new types of tomatoes every season to see if there is a new favourite waiting to be discovered.
They sell their raw produce as well as a range of products to let the flavour of their tomatoes shine in line with their 'flavour is foremost' ethos. This includes their non-organic and organic tomato passata which we will now be stocking on our site! These are made handmade and in small batches next to their glasshouse. It is also worth mentioning they they are completely additive and preservative free.
In terms of sustainability, their growing system is completely biodegradable and all their plant waste is turned into a unique compost which is used to enrich their organic soil to create even tastier tomatoes the following year. Their island is an accredited Biosphere Reserve which celebrates their ability to live harmoniously within them, they even use natural predators to control pests and native bumblebees to pollinate their plants.
At Pastificio Carleschi we are all about reducing food waste and our impact on the planet which is why we will always promote other sustainable British food brands. We are very excited to be able to offer these great products to our customers - also making it easier to buy all the ingredients you need for your perfect pasta meal in one place!
