  • WHOLEGRAIN AND STONEGROUND

    Our pasta begins with British-grown grain, milled on stone.

    Stone milling keeps more of the bran and germ, so the flour is naturally richer in fibre, minerals and flavour.

    Wholegrain means more of the grain ends up where it should, in the bag and on your plate. That’s why when you taste spelt, emmer or einkorn, you taste grain, not just “pasta.”

  • BRITISH GRAINS AND BIODIVERSITY

    This is the heart of what we do.

    We work with British farmers who grow both ancient and modern grains — from spelt, emmer and einkorn to rivet wheat and new crosses like khorasan × mulika. We trial and blend, bringing biodiversity back into the fields and flavour back into the kitchen. Each grain tells a story: resilience, nutrition, distinct character. Together they create a living, evolving range of British pastas unlike any other.

  • SLOW DRYING FOR FLAVOUR AND BITE

    Drying is where pasta either keeps its character or loses it. 

    Many producers speed things up with high heat; we never rush.
    Our pasta follows a slow static drying curve of at least 36 hours, peaking at 46°C. It takes patience, but it preserves aroma, colour, nutrition and bite. That satisfying texture when the pasta holds beautifully in your mouth? It’s slow time doing its work.

  • CRAFT AND CARE

    Technique matters.

    Years of Italian know-how guide every batch. From the balance of hydration to the rhythm of extrusion, from the shapes that stay true to their design to the ridges that hold sauce, nothing is left to chance.

    This is not about tradition for its own sake, but about respect for flavour, texture and the people who will sit at the table.

  • PACKAGING WITH PURPOSE

    What carries our pasta matters as much as the pasta itself.

    We use NatureFlex, a certified compostable film suitable for both home and industrial composting, and even marine biodegradation. For kitchens and families who cook a lot, we offer heavy-duty stitched paper sacks. Every choice we make aims to respect people, soil and planet.

    A Continuous Journey

    From our first spelt trials to today’s blends and shapes, we keep refining every step: milling, hydration, extrusion, drying. We don’t stand still, because the grain doesn’t either. The fields change, the harvests shift, and with them, our pasta evolves. What never changes is our commitment: that every bite carries the soul of British grain and the craft that makes it sing.
